Twins Garden is a project that is unrivaled in Russia, and it is designed to take Russian cuisine to a new stage of its evolution.
The Garden «bloomed» in November 2017 and became a new incarnation of the Twins, changing the location from Malaya Bronnaya Street to Strastnoy Boulevard. By the way, the first Twins has already twice entered the prestigious rating of The World's 50 Best Restaurants, so the brothers have the most serious intentions.
The word «garden» in the title is of strategic importance: about two-thirds of the grocery traffic comes to the kitchen from the private farm. The Twins Garden Farm — is 125 acres of land in Kaluga region, cultivated and designed considering international experience and advanced technology. Under Ivan and Sergei’s supervision about 150 types of vegetables, fruits, berries and herbs are cultivated there; in the natural environment they breed fish and poultry, cows of dairy breeds and rare Nubian goats for their own production of cheese. Scientists of K. A. Timiryazev Moscow Agricultural Academy also take an active part in arranging the farm. They help to organize the space and carefully monitor the shoot of unique for our region cultures.
The à la carte menu contains about 40 items, including, for example, chicken liver pate with sweet peppers, baked mushrooms with onions and celery «bacon», sterlet with beets and «fusilli» from vizigi, «Our Cheeses» set from cow and goat milk. For those who are only getting acquainted with the non-trivial approach of the Berezutsky brothers, a tasting set has been created. It includes six dishes from the main menu, reflecting the gastronomic style of the chefs as much as possible. Every day in the zone chef’s table Sergey and Ivan «write» their gastronomic set, and this picture requires a separate text.
Twins Garden’s wine list is the biggest in Russia. At the moment it includes more than 1000 labels, from popular affordable wines to rare and exclusive items, carefully selected by the experts of the restaurant throughout Europe. The collection is dynamic and will be updated regularly, so 1000 is just the beginning.
The space is divided into two levels. The first one is occupied by the main hall with an open Molteni kitchen, a Russian stove and a hall telling about the Twins Garden farm. There is also a modern laboratory, where Ivan and Sergei work on the menu, and a separate chef’s table area. Upstairs you can finish your evening in the digestive bar and in spring and summer you can enjoy the city centre views from the panoramic veranda.
It is safe to say that Twins Garden is a project that has no analogues in Russia, which is designed to raise Russian cuisine to a new stage in its evolution.
